A Full House for Piedmont: Sips & Bites at Mad Roaster’s Slow Bar

On 10 February 2026, Dunstan Vintner welcomed a full house of wine lovers, partners, and friends to Sips & Bites: Piedmont, Italy. It was an evening dedicated to the elegance, heritage, and diversity of one of Italy’s most celebrated wine regions.
Hosted at Mad Roaster’s Slow Bar, the event was fully attended and vibrant from the very first pour. The intimate setting allowed guests to experience eleven carefully selected wines from Tenuta Olim Bauda and Mario Giribaldi in a relaxed yet focused environment, ideal for meaningful conversations and discovery.
As wine distributors, our mission extends beyond representing exceptional wineries in Singapore. We aim to create opportunities for local wine lovers to engage directly with the stories, terroir, and craftsmanship behind every bottle. This evening was a wonderful reflection of that purpose.
Mad Roasters: A Venue with Heart
Mad Roaster has long been part of Singapore’s coffee scene, first known for serving coffee and bakes with a social mission supporting refugee communities. Today, their café at Enabling Village in Redhill offers a cozy atmosphere with warm hospitality.

Tenuta Olim Bauda: Aromatics, Barbera & Sweet Elegance
The evening began with the wines of Tenuta Olim Bauda, a historic family estate in Monferrato.
The delicately vibrant Moscato d’Asti DOCG “Centive” opened the tasting with fragrant notes of sage, elderflower, and citrus.
The Gavi del Comune di Gavi DOCG followed with floral aromatics and crisp citrus precision, while the lively Grignolino d’Asti “Isolavilla” offered subtle spice and a distinctive almond finish.
The progression into Barbera revealed the estate’s depth. The velvety Barbera d’Asti DOCG “Le Rocchette” showed ripe plum and spice, while the structured Nizza DOCG Riserva, from a vineyard planted in 1961, highlighted the aging potential and prestige of the appellation.

Mario Giribaldi: The Nobility of Nebbiolo
The second half of the evening focused on Nebbiolo, presented through Mario Giribaldi’s portfolio.
The Nebbiolo d’Alba DOC offered elegance and approachability with rose and red fruit notes.
Two expressions of Barbaresco , Cottà 2022 and the 2017 vintage, demonstrated layered aromatics and refined structure.
The Barolo DOCG 2015 and the Barolo DOCG Ravera Riserva 2014, offered wines of depth, balance, and quiet authority that captured the essence of Piedmont’s most revered appellation.

A Strong Showing for Piedmont in Singapore
Theevening concluded with Tenuta Olim Bauda's Moscato Passito DOC, a rich, amber-hued, and beautifully balanced dessert wine aged for ten years.
The full house and lively engagement throughout the evening underscored the growing appreciation for regional Italian wines within Singapore’s wine community.
From fresh, aromatic styles to structured, cellar-worthy classics, the lineup illustrated the remarkable diversity of Piedmont and reinforced the value of creating spaces where wine lovers can connect more deeply.
